I think just taking the turn and river HU is fine, certainly cuts down on the variance as well. if he calls $6 he is probz calling his 11 or whatever it is.

I would probably just call because the first guy is usually shoving this with a draw which cuts down on the possibilities of the other guy having a draw. Even if he does have a draw hes still not getting the odds. He might even call with a weaker overpair too. I agree this does cut down on variance though.
