As played it is really hard to fold on the turn, even though his line looks super strong. If you don't want to get it in, check behind...

Do you have any reads on UTG? It's important to figure out, if a 3bet or a call is better here preflop.
If you figure 3betting is fine, I would 3bet to like 0.65$-0.75$

A bit more than 3x (about pot, add .5-1bb) is good preflop, more OOP (add 1-2bb).

You don't have to 3bet this preflop for one thing. Cbet is on the margin. Turn stack off is semi necessary considering pot odds.

On the 2nd hand - I'd rather cbet than bet turn. If I'm checking the flop it's like I'm giving up unless improved.

I think you need to give these 5NL players a bit more credit for a hand.

They are very very passive & very rarely bluff.
they also make a lot of silly slowplays and bet weak made hands just because they feel like it or because they think its the best hand and therefor they have to bet, etc.

You shouldn't be worried about getting bluffed. Besides, that is the main concern of 90% of players at this limit and thats why they consistently lose. They just keep calling down & think everyone is bluffing them way more often than they really are.
